Batzos

Origin: GREECE

It is a semi hard cheese in brine. It has no outer skin and there are small holes scattered on it.It is white and contained in boxes and it is cut in square particles weighing 1 kilo approx,. It is made of sheep's milk or a mixture of sheep's with goat's milk. The milk is unpasteurised and slightly unbuttered.
Its chemical analysis is as follows :
moisture of 43%,
fats of 19-20%,
protein of 23%,
salt of 5-6%.
Its manufacture is permitted only in the areal of Thessalia, (Central Greece), Western and Central Macedonia.
The cheese is a DOC cheese since 1996 and it has been reserved / safeguarded by law since 1988.
