Is a hard cheese of cylindrical shape, 20-35 cm in lengh, 5-10 cm in width and 1/2 kilo in weight. On its surface there are the marks of the mould

It is spicy and has scarcely any or no holes on its curd. Its colour is pale yellow sugarlike. It is made of sheep's or goat's milk or a mixture of them. Its analysis is
moisture of 35%,
fats of 33%,
proteins of 27-28%,
salt of 2-2.5%.
It is made on the mountain of Parnasus in Central Greece.
It has been reserved by law since 1988 and it is a DOC cheese since 1996.
