Origin: GREECE

Is a soft fragmented cheese of the ungment type. It is white and its curd consists of small hard pieces in a creamy mass. It is made of sheep's milk or a mixture of sheep's and goat's milk. Its analysis is the following
moisture of 70%,
fats of 13-14%,
proteins of 10%,
salt of 2,5-3%.
Its manufacture is permitted within the area of Epyros (Western Greece) and Thesalia (Central Greece).
It is a DOC cheese since 1996 and its manufacture has been safeguarded since 1988.
