Katiki of Domokos
Origin: GREECE
It is a white unguent - like cheese with no shape or skin, which is served with a spoon. It is made of goat's milk or a mixture of it with sheep's milk. The animals producing this milk are bred on the "Othris" plateau in the Domokos area.
Its chemical analysis is :
moisture of 75% max.,
fats in dry matter of 40%
and salt of 2-3%.
