Ladotiri of Mitilini island

Origin: GREECE

It is a hard cheese with shape in small piece weighting 1 kilo. It matures and conserves inside olive. Its colour is light yellow and has small irregular holes.

Fats 31.6%
Proteins 27%
Salt 1.5%
It is made exclusively in Lesvos island from sheep's or misture sheep's and goat's milk. Milk can be pasteurized or unpasteurized.
Since 1996 is a DOC cheese and since 1998 Greek law secured this cheese.
Today is paraffined from ..... reasons while only part of its mature is made in olive.
