Manouri

Origin: GREECE

It is a semi hard cheese, white colour with cylindrical shape and no outer skin. Whey of hard cheeses provides the best qualities. It is soft and solid with no holes.
It is mostly made of sheep's milk or a mixture of sheep's with goat's milk. It is made in the parts of Thessalia, Central and Western Macedonia.
Its chemical analysis is the following :
moisture of 50-60% ,
fats of 36-38%,
proteins of 11%
and salt of 0.8%.
Its manufacture is safeguarded since 1988 and since 1996 is a DOC cheese.
