CHEESE
Metsovone

Origin: GREECE

Is a hard smoked cheese, made in the pasta filata method. It bears the name of the town "Metsovo" where it is made and it is of cylindrical shape having one edge thicker than the other. It is waxed in parafin and tied with a string in order to be hung while being smoked. Its curd is of golden yellow colour and it bears small irregular holes. It is made of unpasteurized cow's milk or a mixture with sheep's or goat's milk
Its chemical analysis is
moisture of 42%,
proteins of 26-27%,
fats of 26%,
salt of 2,8%.
The cheese is unique and keeps all the scents and aromas of the mountains of Pindos.
