CHEESE
San Michalis of Syros

Origin: GREECE

Hard cheese with solid mass , bearing tiny irregular holes, golden yellow colour and its taste reminds of the Italian cheese, Parmezana. Its skin is sometimes parafined. It is made exclusively of cow's milk from animals which live on the Cycladic island of Syros.
Its chemical analysis is the following :
moisture of 42-47% max.,
fats in dry matter of 35%
and salt of 1.8 - 3% max.

The cheese has been safeguarded sice 1988 and it has been a DOC cheese since 1996.
