CHEESE
Sfela or Feta tis Fotias

Origin: GREECE

Soft white cheese in brine. In its mass has small holes and no outer skin. It is preserved in brine inside wooden barrels or tin boxes. It is made of fresh unpasteurized milk usually of high acidity. Sheep's and goat's milk is used and rarely plain goat's milk. Its analysis is as follows :
moisture of 40-41%,
fats of 27% as it is,
proteins of 21-22%
and salt of 4.7%.
The manufacture of this cheese is permitted only in the Southern Peloponnissos and particularly in the vicinity of Messinia.
