CHEESE
Cretan Xynomizithra

Origin: GREECE

Soft, white, unguent - like, granulated cheese with no shape or skin. It is made of sheep's or goat's whey or a mixture of both with the addition of milk. Has sour taste and is a type of mizithra cheese.
Its chemical analysis is :
moisture of 50-51%,
proteins of 15.5%,
fats of 23%
and salt of 2%.
It is made on the island of Crete.
